Apple Banana Pecan Muffins

1 cup sugar
5 tablespoons unsalted butter, very soft
2 eggs
2 very ripe bananas, mashed
1/2 cup Greek yogurt
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 and 1/2 cups apples, chopped - I used Honeycrisp
2/3 cup chocolate chips
1/2 cup pecans - chopped

1.  Preheat oven to 350 degrees
2.  In a mixing bowl, using electric mixer, beat sugar and butter on high speed for 1.5 minutes. The consistency will be somewhat crumbly
3.  Add eggs and continue beating for several more minutes until the mixture becomes fluffy and lighter in color
4.  Add mashed bananas, Greek yogurt, and vanilla extract and continue beating until all ingredients are well incorporated
5.  In a separate bowl, sift together flour, baking powder, baking soda, and cinnamon
6.  Add dry ingredients to wet ingredients and mix until just combined. Do not over-mix. 
7.  Fold in chopped apples, chocolate chips, and pecans
8.  Grease muffin pan. Fill each muffin cup almost to the top 
9.  Bake for about 25 minutes at 350 degrees or until toothpick comes out clean
10.  Let cool.  Drizzle with warm caramel sauce or dulce de leche using small spoon
