Why New-Crop Apples Are So Exciting

There is nothing quite like that first bite of a great new-season apple.

Freshly harvested apples can give you that wonderful combination apple lovers wait all year for:

  • A satisfying CRUNCH
  • Plenty of JUICE
  • Wonderful fresh apple AROMA
  • Sweet, tart or sweet-tart FLAVOR
  • That unmistakable taste of APPLE SEASON!

Different apple varieties mature at different times, which means apple season is almost like a parade. Early varieties lead the way, followed by more favorites as summer turns to fall and the harvest continues.

You can follow many of the varieties growing for the 2026 apple crop here.

Picked at Just the Right Time

One of the most important steps in producing a great apple happens before it ever reaches a box:

It has to be picked at the right time.

An apple can look beautiful on the outside and still not be at its ideal maturity. Growers pay close attention to the fruit because harvest timing can affect flavor, sweetness, tartness, texture, juiciness and storage quality.

Pick an apple too early and it may not yet have developed the characteristics that make that particular variety special. Leave some varieties too long and they may begin losing the firmness needed for handling and storage.

The goal is that wonderful harvest window when the apple has developed the flavor and texture we are looking for.

That's where orchard experience matters.

Every Apple Doesn't Have to Taste the Same

One of the great things about apple season is discovering just how different apples can be.

A Honeycrisp apple is famous for its explosive crunch and juiciness, but not every apple variety is naturally supposed to have that same texture.

Some apples are extremely crisp. Others are firm and dense. Some traditional varieties have a more tender bite and wonderful old-fashioned apple flavor.

That's part of the fun!

If you prefer your apples as crisp as possible, refrigeration helps preserve their texture. If an apple is a little crisper than you personally prefer, allowing it to sit at room temperature for a while will gradually soften the texture.
