1 cup quinoa - rinsed
2 cups unsweetened vanilla almond milk (or any other milk you prefer)
2 medium apples - shredded (Order Apples Here)
1/4 cup unsweetened applesauce
1/2 teaspoon apple pie spice
1/4 teaspoon vanilla extract
pinch of salt
1/4 cup chopped pecans (optional)
honey or pure maple syrup (optional for topping)

1.  Bring quinoa, almond milk, and applesauce to a boil in a medium pot
2.  Reduce to simmer and continue to cook for 15 minutes until liquid is absorbed- stirring occasionally
3.  Stir in apple pie spice, vanilla, salt, and pecans
4.  Pour into bowls.  Top with shredded apples & a drizzle of honey or maple syrup
