Ingredients:
Crust:
6 egg yolks
1 cup white sugar
1 cup butter - room temperature
2½ cup all-purpose flour
3 cup shredded coconut
1 tablespoon vanilla extract
1 teaspoon baking soda
Apple Filling:
11 cup grated apples (Click Here for fresh NY apples) 
5 tablespoons white sugar
1 teaspoon cinnamon
Meringue:
6 egg whites
1½ cup white sugar

  1. Preheat oven to 350 degrees
  2. Cream butter in a mixing bowl, beat in egg yolks, gradually add sugar and continue creaming until light and fluffy 
  3. In a separate bowl- mix the flour, shredded coconut, vanilla extract and baking soda 
  4. Slowly add the dry ingredients to the wet ingredients and mix until combined 
  5. Roll the dough with lightly floured hands and place into greased cake pan (13 x 9)
  6. Bake for 15 minutes
  7. Cook the apples with sugar and cinnamon (optional: add a handful of coarse ground nuts) 
  8. After 15 minutes, remove from oven and spread the apple mixture on top 
  9. Place back in oven and bake at 350 F for 20 minutes 
  10. Cream egg whites and sugar in a mixing bowl and continue creaming until light and fluffy
  11. After 20 minutes remove from the oven and cover with meringue 
  12. Bake for 10 minutes or until meringue turns golden.  Make sure the top doesn't get too browned 
  13. Let cool completely on cooling rack.  Cut into 2 inch bars 
  14. Decorate with caramel sauce
