Ingredients:
1 butternut squash, peeled and cut into 3/4 inch pieces 
3 - 4 potatoes peeled and cut into 3/4 inch pieces
1 large apple from Honeycrisp.com, peeled and chopped
1 onion, chopped
2 cups vegetable broth
1 tablespoon butter or coconut oil
1 teaspoon pumpkin pie spice
pinch of salt and pepper to taste
toasted pumpkin seeds & plain yogurt or sour cream to top

1. Combine squash, potatoes, onion, broth and apples in crockpot. Cover and cook on LOW 5 - 6 hours or HIGH for 3 - 4 hours. 
2.  Stir in pumpkin pie spice, butter, salt, and pepper at the end.  Let sit for 5 - 10 minutes to blend the flavors.  Enjoy! 

Note: You can use ground ginger, nutmeg for the pumpkin pie spice if you don't have any on hand, or substitute curry powder for the pumpkin pie spice to mix it up!
