Baked Apple Pie Chia Pudding

Pudding Ingredients:
  • 2 tbsp chia seeds (black ones have more nutritional value)
  • 1/2 cup unsweetened vanilla almond milk
  • 1/4 tsp cinnamon
Baked Apple Ingredients: 
  • 1 apple, finely chopped
  • 1 1/2 tsp water
  • 1/2 tsp honey
  • 1/4 tsp cinnamon
  • 2 tbsp golden raisins
1. In a bowl combine chia seeds, almond milk, and cinnamon- place in fridge for 1-2 hours or overnight (even better) until chia seeds have absorbed the milk
2. Mix chopped apples, water, honey, and cinnamon in a bowl
3. Microwave for 1-minute increments, stirring in between, until apples are soft (mine took 2 1/2 minutes)
4. Add in golden raisins, stir, and let sit
5. Mix 1/2 the apple mixture to the chia seed pudding and place back into the fridge
6. When ready to eat, top with the remaining warm apple mixture.  Enjoy!
